Yeast extract is consisted of primarily amino-acids, peptides, carbohydrates and salts. Yeast extract is used in food, pharmaceutical, nutraceutical, and microbiological industries. Yeast extracts are usually produced from Saccharomyces cerevisiae, by the autolysis, plasmolysis and hydrolysis but the most frequently manufacturing practise is autolysis. In the present study, corn steep liquor was used for cultivation of S. cerevisiae and then autolysis was examined for the cell wall lysis. The autolysis at pH of 6.0, temperature of 60 ᵒC, and duration time of 24 h provided a yield value about 0.426 gyeast extract gyeast cell-1 from S. cerevisiae yeast cells. The analysis of the produced yeast extract showed the protein content was 47.2%w.
