The effects of applications of organic fertilizer "cow manure" on quantitative and qualitative characteristics of hot pepper evaluated under field conditions. Treatments consisted of four levels of cow manure (۰, ۵, ۱۰, and ۱۵ t ha-۱). The results showed that treatments of cow manure (۱۰ t ha-۱) significantly increased the plant height, the number of lateral branches, nodes, and leaves, fruit yield per plant, fruit length, and fruit fresh weight. The highest and the lowest internals distance and weight of a thousand seeds were obtained in ۵ t ha-۱ of cow manure and control treatments, respectively. Also, the greatest main stem diameter was recorded in treated plants with ۱۵ tha-۱ of cow manure. The chlorophyll contents and fresh weight of hot pepper leaf, number of fruits per plant, and fruit diameter were higher in ۱۵ t ha-۱ of cow dung fertilizer. The results indicated that fruit's total soluble solids and ascorbic acid are influenced by cow manure. However, pH was not affected significantly with cow manure treatment application. Also, the fruit acidity of the control was higher than the other treatments. Thus, results showed that cow manure has a strong impact on the quantitative and qualitative characteristics of hot pepper.
