چکیده مقاله:

Lipase is an enzyme that is versatile and has many industrial applications. But the stability ofthe lipase enzyme in various environments is too low to allow its use under harsh conditionsthat are necessary for industrial applications. In recent years the various types ofnanoparticles are used due to the high surface area and pore volume of the molecules thatfacilitate the entrance of enzyme molecules. A good type of nano-carriers is chitosannanoparticle which is a biological polymer. So, in this research kinetic properties of the freeand stabilized lipase enzyme on chitosan nanoparticles will be discussed, overall benefits ofan enzyme catalyst which is much higher than the non-enzymatic catalyst, since unwantedside reactions during the use of non-specific catalysts will be avoided using a proprietarycatalyst of enzyme [1].
